Roasted Vegetable Medley with Tahini Yogurt Sauce

Ingredients

  • 1 lb mixed vegetables (broccoli, carrots, bell peppers, zucchini), cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup tahini
  • 1/4 cup plain yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 23 tbsp water, to thin

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Toss the mixed vegetables with olive oil, salt, and pepper on a baking sheet.
  3. Spread the vegetables in a single layer.
  4. Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
  5. While the vegetables roast, prepare the tahini yogurt sauce: whisk together tahini, yogurt, lemon juice, and minced garlic in a small bowl.
  6. Gradually add water, one tablespoon at a time, until the sauce reaches your desired consistency.
  7. Serve the roasted vegetables warm, drizzled with the tahini yogurt sauce.

Notes

  • You can use any vegetables you like.
  • Adjust the lemon juice and garlic to your taste.
  • The sauce can be made ahead of time and stored in the refrigerator.
