Simple Garlic Butter Shrimp Scampi

A quick and flavorful shrimp dish perfect for a romantic dinner at home.

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine or chicken broth
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 8 ounces linguine or spaghetti

Instructions

  1. Cook the pasta according to package directions. Reserve about 1/2 cup of the pasta water before draining.
  2. While the pasta cooks, melt the butter in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes (if using) to the skillet. Cook for about 1 minute until fragrant; do not let the garlic brown.
  4. Add the shrimp to the skillet. Cook for 2-3 minutes per side until pink and opaque.
  5. Pour in the white wine or broth and lemon juice. Bring to a simmer and cook for 1 minute, scraping up any browned bits from the bottom of the pan.
  6. Add the drained pasta to the skillet along with the chopped parsley. Toss everything together.
  7. If the sauce seems too thick, add a few tablespoons of the reserved pasta water until you reach your desired consistency.
  8. Season with salt and pepper to taste. Serve immediately.

Notes

  • For a richer sauce, add 2 tablespoons of heavy cream with the wine.
  • Use fresh lemon juice for the best flavor.
  • Serve with crusty bread to soak up the extra sauce.
