Salmon Salad with Bright Citrus Dressing

Ingredients

  • 2 5-to-6 oz salmon filets
  • 3/4 cup water
  • 2 teaspoons minced shallot
  • 3 finely chopped garlic cloves
  • 2 teaspoons honey
  • 1/2 lemon, juiced
  • 34 thin lemon slices
  • salt and pepper to taste
  • 2 1/2 Tablespoons olive oil, plus additional for salmon
  • 1 grapefruit, segmented
  • 2 blood oranges, segmented
  • 1 large avocado, sliced
  • 1/2 cup roughly chopped pistachios
  • 4 cups chopped romaine lettuce

Instructions

  1. Salmon in the Instant Pot: Pour 3/4 cup water into the Instant Pot. Lightly oil the steam rack or place parchment paper on it. Drizzle salmon filets with olive oil, salt, pepper, and lemon slices. Place on the steam rack in the Instant Pot. Steam for 2-3 minutes on high pressure. Quick release the steam.
  2. Salmon Packet: Preheat oven to 400°F. Cut a large piece of foil and a piece of parchment paper larger than the salmon filets. Layer parchment on foil, and salmon on parchment. Drizzle filets with olive oil, salt, pepper, and lemon slices. Fold foil to create a packet. Bake for 15-20 minutes.
  3. Dressing: Whisk together shallots, garlic, honey, lemon juice, salt, and pepper. Drizzle in olive oil while whisking.
  4. Salad: Toss romaine lettuce with grapefruit, oranges, avocado, and pistachios. Divide between two plates. Top with cooked salmon.
