Salmon with Creamy Tuscan Sauce and Spinach

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • ½ cup heavy cream
  • ½ teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste
  • Fresh basil leaves for garnish
  • Lemon wedges for serving

Instructions

  1. Pat the salmon fillets dry and season with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat. Sauté minced garlic until fragrant.
  3. Increase heat to medium-high. Add salmon fillets skin-side down and cook until skin is crispy.
  4. Flip salmon and cook for 3-4 minutes more, until cooked through.
  5. Remove salmon from skillet and set aside.
  6. In the same skillet, add cherry tomatoes and cook until softened. Add spinach and cook until wilted.
  7. Pour in heavy cream and sprinkle with red pepper flakes. Stir to combine and simmer until thickened.
  8. Return salmon to the skillet. Spoon sauce over the fillets and simmer for 1 minute.
  9. Plate the salmon, drizzle with sauce, garnish with basil, and serve with lemon wedges.

Notes

  • For a lighter option, substitute heavy cream with coconut cream.
