1 cup cottage cheese (low-fat or full-fat)
4 large eggs
½ cup almond flour or oat flour
1 tsp baking powder
½ tsp salt
¼ tsp black pepper
½ cup shredded cheddar or mozzarella cheese (optional)
1 cup chopped vegetables (spinach, zucchini, or bell peppers)
2 tbsp chopped fresh herbs (parsley, chives, dill)
Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
In a mixing bowl, whisk together eggs, cottage cheese, and flour until smooth.
Add baking powder, salt, and pepper, then fold in veggies, herbs, and cheese.
Spoon the mixture evenly into the muffin cups, filling each about ¾ full.
Bake for 25–28 minutes or until tops are golden and a toothpick comes out clean.
