Seared Salmon with Lemon Orzo

A perfectly seared salmon fillet sits atop a bed of creamy lemon orzo, garnished with fresh parsley.

A quick and flavorful salmon dish served over lemon-infused orzo pasta.

Ingredients

  • 1 pound salmon fillet
  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/4 cup lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Pat the salmon fillet dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear the salmon for 4-5 minutes per side, until cooked through. Remove from skillet and set aside.
  4. In the same skillet, add the orzo and toast for 1 minute.
  5. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed.
  6. Stir in the lemon juice and parsley. Season with salt and pepper to taste.
  7. Serve the seared salmon over the lemon orzo.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the orzo.
  • Garnish with extra lemon wedges if desired.
