Sheet Pan Chicken and Vegetable Dinner

A simple recipe for cooking chicken and vegetables together on one sheet pan for an easy meal.

Ingredients

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 lb broccoli florets
  • 2 cups chopped carrots
  • 1 red bell pepper, cut into chunks
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the chicken pieces, broccoli, carrots, and red bell pepper.
  3. Drizzle the olive oil over the chicken and vegetables.
  4. Sprinkle the oregano, garlic powder, salt, and pepper over the mixture. Toss everything together until evenly coated.
  5. Spread the chicken and vegetables in a single layer on the prepared baking sheet.
  6. Bake for 20 to 25 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Serve immediately.

Notes

  • You can substitute other firm vegetables like potatoes or zucchini if you prefer.
  • For crispier vegetables, ensure they are not overcrowded on the pan. Use two pans if necessary.
