Sheet Pan Fajitas

Quick and easy fajitas cooked entirely on a single sheet pan.

Ingredients

  • 1 pound chicken breast, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: shredded cheese, sour cream, salsa, guacamole

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. In a large bowl, toss the sliced chicken, bell peppers, and onion with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  3. Spread the mixture in a single layer on a large baking sheet.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
  5. Warm the tortillas according to package directions.
  6. Serve the fajita mixture in the warm tortillas with your favorite toppings.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the spice mixture.
  • You can substitute shrimp or steak for the chicken.
  • If you don’t have fresh garlic or onion powder, you can use 1 teaspoon of garlic powder and 1 teaspoon of onion powder.
