Showstopper Chicken and Pasta Delight (For Beginners)

A simple, creamy chicken and pasta dish perfect for beginner cooks, ready in under 30 minutes.

Ingredients

  • 650 g (1.4 lb) Boneless & skinless chicken breast, cut into bite-sized pieces
  • 1 tbsp Olive oil
  • 3 Garlic cloves, Peeled and crushed
  • 170 g (6 oz) Sun dried tomatoes, Drained and very finely chopped
  • 1 tsp Oregano
  • 2 tsp Paprika
  • 250 g (9 oz) Dried pasta
  • 650 ml (2.75 cups) Chicken stock
  • 150 ml (0.75 cups) Double cream
  • 50 g (2 oz) Parmesan, Grated
  • 120 g (4 oz) Spinach
  • Freshly ground black pepper

Instructions

  1. Heat the oil in a large, deep frying pan over a medium heat. Add the chicken pieces and pepper. Cook for 5 minutes, stirring occasionally, until all sides start to colour.
  2. Reduce the heat. Add the garlic, sun dried tomatoes, oregano, and paprika. Stir for 3-5 minutes until the garlic softens.
  3. Add the pasta and stock. Stir well, cover with a lid, and cook for 15-20 minutes, stirring occasionally, until the pasta is cooked and most liquid is absorbed.
  4. Turn the heat to the lowest setting. Add the spinach and cream and stir well for 1-3 minutes until the spinach wilts and the cream heats through. Check the chicken is cooked and add salt and pepper if needed.
  5. Turn off the heat and stir in the parmesan.

Notes

  • Use olive oil, or use some oil from the sun dried tomatoes jar for extra flavor.
  • Pasta cooking time varies by shape and heat; watch it and add boiling water if needed.
  • Chop sun-dried tomatoes very small if you dislike the texture; they blend into the sauce for flavor.
  • Double cream is heavy cream in the US.
