Showstopper Chicken and Pasta Delight

A simple recipe for a flavorful chicken and pasta dish.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 12 oz pasta (penne or rotini)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Stir in diced tomatoes, chicken broth, oregano, and basil. Bring mixture to a simmer.
  6. Reduce heat to low and stir in heavy cream and Parmesan cheese. Cook until the sauce thickens slightly.
  7. Return the cooked chicken to the skillet.
  8. Add the cooked pasta to the skillet and toss to coat everything in the sauce.
  9. Season with salt and pepper to your preference.
  10. Serve immediately.

Notes

  • You can substitute heavy cream with half-and-half for a lighter sauce.
  • Add fresh parsley for garnish before serving.
  • Use your favorite short pasta shape.
