Shrimp Alfredo with Creamy Parmesan Sauce

Tender shrimp and fettuccine pasta coated in a rich, homemade Alfredo sauce made with Parmesan and Asiago cheeses, garlic, and Italian seasonings. Optional panko topping adds crunch. Ready in 30 minutes.

  • 1 lb large uncooked shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • ยพ lb fettuccine pasta
  • 6 tablespoons salted butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 3 cups half and half
  • ยฝ cup Parmesan cheese, grated
  • ยฝ cup Asiago cheese, grated
  • 1 teaspoon dried parsley
  • ยฝ teaspoon dried basil
  • ยผ teaspoon salt
  • Freshly cracked pepper to taste
  • ยผ cup Panko breadcrumbs (optional)
  • 1 tablespoon salted butter (optional)
  • โ…› teaspoon garlic powder (optional)
  • 1 lemon, cut into wedges
  • Red pepper flakes, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook fettuccine pasta according to package directions. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  3. In the same skillet, melt 6 tablespoons of butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  4. Whisk in the flour and cook for 1 minute, stirring constantly.
  5. Gradually whisk in the half and half until smooth. Bring to a simmer, stirring occasionally, until the sauce thickens slightly, about 5 minutes.
  6. Reduce heat to low. Stir in Parmesan cheese and Asiago cheese until melted and smooth.
  7. Add dried parsley, dried basil (if using), salt, and pepper. Stir to combine.
  8. Return the cooked shrimp to the skillet and toss to coat in the sauce.
  9. If making the optional panko topping, melt 1 tablespoon butter in a small skillet over medium heat. Add panko breadcrumbs and garlic powder, and cook until golden brown and toasted.
  10. Add the cooked fettuccine to the skillet with the shrimp and sauce. Toss to coat evenly.
  11. Serve immediately, topped with optional panko, lemon wedges, red pepper flakes, and fresh parsley.

Notes

  • For a richer sauce, you can use heavy cream instead of half and half.
  • Adjust seasonings to your preference.
  • Ensure shrimp is not overcooked to maintain tenderness.
