Shrimp Stir Fry with Noodles

A quick and easy shrimp stir fry served over noodles.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 ounces noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce and sesame oil.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add garlic and cook until fragrant, about 30 seconds.
  5. Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from skillet and set aside.
  6. Add broccoli, bell pepper, and carrot to the skillet. Stir fry until vegetables are tender-crisp, about 5-7 minutes.
  7. Return shrimp to the skillet. Add the soy sauce mixture and toss to coat.
  8. Add cooked noodles to the skillet and toss everything together until well combined and heated through.
  9. Serve immediately.

Notes

  • You can add other vegetables like snap peas or mushrooms.
  • For extra flavor, add a pinch of red pepper flakes.
