Simple Chicken Sheet Pan Dinner

A straightforward and easy chicken dinner cooked entirely on one baking sheet.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 lb broccoli florets
  • 1 red bell pepper, chopped
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken thighs with 1 tablespoon of olive oil, paprika, garlic powder, oregano, salt, and pepper.
  3. Arrange the seasoned chicken on one side of a large baking sheet.
  4. In the same bowl, toss the broccoli florets, chopped red bell pepper, and red onion wedges with the remaining 1 tablespoon of olive oil, salt, and pepper.
  5. Spread the vegetables on the other side of the baking sheet next to the chicken.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender and slightly browned.
  7. Serve immediately.

Notes

  • You can substitute chicken breasts for thighs, but adjust the cooking time as they cook faster.
  • Feel free to add other vegetables like zucchini, carrots, or potatoes.
  • For extra flavor, squeeze fresh lemon juice over the finished dish.
