1 (14 ounce) can artichoke hearts, drained and quartered
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 large egg, beaten
1/2 cup milk
Vegetable oil, for frying
Instructions
In a shallow dish, whisk together flour, salt, pepper, garlic powder, and paprika.
In another shallow dish, whisk together egg and milk.
Dip each artichoke heart first into the flour mixture, then into the egg mixture, and finally back into the flour mixture, ensuring each piece is well coated.
Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
Carefully add the coated artichoke hearts to the hot oil in a single layer, working in batches if necessary to avoid overcrowding the pan.
Fry for 2-3 minutes per side, until golden brown and crispy.
Remove the artichoke hearts with a slotted spoon and drain on paper towels.
Serve immediately.
Notes
Serve with your favorite dipping sauce, such as aioli or marinara.
