1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil
1/2 cup honey
1/4 cup low sodium soy sauce
4 cloves garlic, minced
1 tablespoon apple cider vinegar
1 teaspoon cornstarch
1/4 cup water
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Fresh parsley or green onions, chopped, for garnish (optional)
Instructions
Cut chicken breasts into 1-inch pieces. Pat dry and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear chicken in batches until golden brown and cooked through. Remove chicken and set aside.
In a small bowl, whisk together honey, soy sauce, minced garlic, apple cider vinegar, and red pepper flakes (if using). In a separate cup, dissolve cornstarch in water to make a slurry.
Reduce skillet heat to medium-low. Pour honey garlic sauce mixture into the skillet. Simmer gently, scraping up browned bits.
Slowly pour cornstarch slurry into the simmering sauce while whisking constantly. Cook for 1-2 minutes until sauce thickens.
Return cooked chicken to the skillet. Toss to coat chicken in sauce.
Cook for another 1-2 minutes until chicken is heated through and coated. Garnish with parsley or green onions if desired. Serve immediately.
Notes
Patting the chicken dry is important for a good sear.
Doing this in batches prevents overcrowding the pan.
The browned bits in the skillet add extra flavor to the sauce.
