Simple Low-Carb Chicken and Broccoli Bake

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 head of broccoli, cut into florets
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and cook until browned on all sides. Season with salt and pepper.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Stir in the heavy cream, cheddar cheese, and Parmesan cheese. Cook, stirring, until the cheese is melted and the sauce is smooth.
  5. Add the broccoli florets to the skillet and stir to coat them in the sauce.
  6. Pour the mixture into a baking dish.
  7. Bake for 20-25 minutes, or until the chicken is cooked through and the broccoli is tender.

Notes

  • You can add other low-carb vegetables like cauliflower or bell peppers.
  • For a richer flavor, use a mix of cheeses.
