Skillet Pork Chops with Creamy Dijon Sauce

Tender pork chops seared and finished in a rich, creamy Dijon sauce, baked to perfection.

Ingredients

  • 4 boneless pork chops
  • salt and pepper, to taste
  • 2 tablespoons butter
  • 2 teaspoons oil
  • 1 tablespoon butter
  • 2 teaspoons minced garlic
  • 1 cup low sodium chicken broth
  • 2 tablespoons dijon mustard
  • 1 cup heavy cream
  • ยฝ teaspoon salt, or to taste
  • ยผ teaspoon cracked black pepper, or to taste

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Season pork chops generously with salt and pepper.
  3. Melt 2 tablespoons butter in a large skillet over medium heat. Add oil.
  4. Sear pork chops for 2-3 minutes per side. Transfer to a plate and cover.
  5. Add 1 tablespoon butter to the skillet. Melt and stir in garlic until fragrant, about 1-2 minutes.
  6. Add chicken broth. Whisk in dijon mustard and heavy cream. Stir in salt and pepper.
  7. Return pork chops to the skillet. Spoon sauce over them. Transfer skillet to the oven.
  8. Bake for 10 minutes. Spoon pan liquid over pork chops.
  9. Continue baking for 10-15 minutes, or until pork is cooked through and sauce has thickened.
  10. Spoon more sauce over pork chops. Garnish with black pepper and fresh herbs if desired. Serve.

Notes

  • Thick boneless pork chops retain moisture well. Thin pork chops can be used but require a shorter cooking time.
