Slow Cooker Chicken and Rice

A simple and flavorful slow cooker recipe for tender chicken and perfectly cooked rice.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Add chicken thighs to the slow cooker.
  2. In a bowl, combine rice, chicken broth, water, chopped onion, minced garlic, salt, and pepper.
  3. Pour the rice mixture over the chicken.
  4. Drizzle olive oil over the top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Shred chicken and stir into the rice before serving.

Notes

  • You can substitute chicken breasts for thighs, but adjust cooking time as needed.
