Smashburger Quesadillas

A quick recipe combining the flavor of a smashburger with the convenience of a quesadilla.

Ingredients

  • 4 oz ground beef
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 small flour tortillas
  • 2 slices cheddar cheese
  • 1 tablespoon butter

Instructions

  1. Divide the ground beef into two equal portions.
  2. Heat a skillet over medium-high heat.
  3. Place one portion of beef in the skillet and immediately press down firmly with a spatula to create a thin patty.
  4. Season the patty with half the salt and pepper.
  5. Cook for 1-2 minutes until the edges brown.
  6. Flip the patty and cook for another minute. Remove from the skillet.
  7. Repeat steps 3-6 with the second portion of beef.
  8. Wipe the skillet clean and melt half the butter over medium heat.
  9. Place one tortilla in the skillet. Top with one slice of cheese and one cooked beef patty.
  10. Fold the tortilla in half to form a quesadilla.
  11. Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is melted.
  12. Remove and repeat with the remaining ingredients.
  13. Slice each quesadilla in half before serving.

Notes

  • You can add mustard or ketchup inside before folding for extra flavor.
  • Use a sturdy spatula for pressing the meat thin.
