Smothered Pork Chops with Onion Gravy

Juicy smothered pork chops served in a creamy onion gravy, garnished with fresh parsley.

Tender, seasoned pork chops seared and simmered in a rich, creamy buttermilk and onion gravy. Perfect served over mashed potatoes.

  • 4 boneless pork chops
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • ยฝ teaspoon ground black pepper
  • ยฝ cup all-purpose flour, divided
  • ยผ cup unsalted butter
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, thinly sliced
  • 2 teaspoons garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 cup chicken broth
  • 1 cup buttermilk
  • parsley, chopped for garnish
  • salt, to taste

Instructions

  1. Pat pork chops dry. Season both sides with onion powder, garlic powder, salt, and pepper.
  2. Set aside 2 tablespoons of flour. Dredge the remaining flour-coated pork chops on a plate. Shake off excess flour.
  3. In a large skillet over medium heat, melt butter with oil. Add pork chops in batches if needed. Sear for 5-6 minutes per side until a crust forms. Remove pork chops and tent with foil.
  4. Add sliced onions to the same skillet. Cook for 8-10 minutes until golden and caramelized. Add minced garlic and cook for 1 minute.
  5. Sprinkle the reserved 2 tablespoons of flour over the onions and garlic. Stir to coat.
  6. Reduce heat to low. Add thyme, salt, and pepper.
  7. Slowly pour in chicken broth, stirring and scraping browned bits from the pan. Cook until sauce thickens, about 2-3 minutes.
  8. Stir in buttermilk.
  9. Return pork chops to the pan. Spoon gravy over them. Increase heat to medium, bring to a simmer, and cook for 5 minutes, or until pork reaches an internal temperature of 145ยฐF and gravy thickens.
  10. Garnish with parsley and serve immediately.

Notes

  • You can use thick or thin-cut pork chops. Adjust cooking time for thin cuts as they cook faster.
  • If your skillet is too small, cook pork chops in batches to avoid overcrowding.
