2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons Cajun seasoning
8 ounces pasta of your choice
1 tablespoon olive oil
1 cup heavy cream
1 cup chicken broth
1 cup sliced bell peppers
1 cup sliced onions
1 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Cook pasta according to package directions. Drain and set aside.
Season chicken pieces with Cajun seasoning.
Heat olive oil in a skillet over medium heat. Add chicken and cook until browned and cooked through, about 6-7 minutes per side. Remove chicken from skillet.
Add bell peppers and onions to the same skillet and sauté until softened.
Pour in heavy cream and chicken broth. Bring to a simmer.
Stir in Parmesan cheese until the sauce thickens.
Return the cooked chicken to the skillet. Add the cooked pasta.
Toss everything together until well combined.
Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
Serve hot.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently.
