2 large boneless, skinless chicken breasts (pounded evenly)
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
ยฝ teaspoon dried thyme
ยฝ teaspoon dried oregano
ยฝ teaspoon salt
ยผ teaspoon black pepper
Lemon wedges, for serving
Fresh parsley, for garnish (optional)
Instructions
In a small bowl, mix the Cajun seasoning, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Set aside.
Pat the chicken dry and place it on a cutting board.
Drizzle with olive oil and rub the spice mix all over both sides. Let it rest for 10 minutes.
Heat a large skillet over medium-high heat and add a drizzle of olive oil.
Place the chicken in the pan and cook for 4-5 minutes per side, undisturbed, until golden brown.
Reduce heat to medium, cover, and cook for another 4-5 minutes or until the internal temperature reaches 165ยฐF (75ยฐC).
Remove from heat and let it rest for 5 minutes before slicing.
Serve with lemon wedges and garnish with fresh parsley if desired.

For grilling, preheat the grill to 375-450ยฐF (medium heat) and grease the grates with oil. Cook for 5-7 minutes per side, or until the internal temperature reaches 165ยฐF (75ยฐC).
