  • 2 large boneless, skinless chicken breasts (pounded evenly)
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ยฝ teaspoon dried thyme
  • ยฝ teaspoon dried oregano
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • Lemon wedges, for serving
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a small bowl, mix the Cajun seasoning, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Set aside.
  2. Pat the chicken dry and place it on a cutting board.
  3. Drizzle with olive oil and rub the spice mix all over both sides. Let it rest for 10 minutes.
  4. Heat a large skillet over medium-high heat and add a drizzle of olive oil.
  5. Place the chicken in the pan and cook for 4-5 minutes per side, undisturbed, until golden brown.
  6. Reduce heat to medium, cover, and cook for another 4-5 minutes or until the internal temperature reaches 165ยฐF (75ยฐC).
  7. Remove from heat and let it rest for 5 minutes before slicing.
  8. Serve with lemon wedges and garnish with fresh parsley if desired.

Notes

  • Enjoy with rice, roasted vegetables, in wraps, or salads.
  • For grilling, preheat the grill to 375-450ยฐF (medium heat) and grease the grates with oil. Cook for 5-7 minutes per side, or until the internal temperature reaches 165ยฐF (75ยฐC).
