  • 1.5 lbs jumbo shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 1 onion, finely chopped
  • 5 cloves garlic, minced
  • 2 cups coconut milk, unsweetened
  • 2 tbsp chili powder, adjust to taste
  • 1 tsp ground black pepper
  • 1 tsp sea salt
  • 1 lime, juiced
  • 0.5 cup fresh cilantro, chopped

Instructions

  1. In a large bowl, combine shrimp, 1 tablespoon of olive oil, and chili powder. Toss to coat evenly.
  2. Heat remaining olive oil in a skillet over medium heat. Add onions and garlic, sauté until translucent.
  3. Stir in coconut milk, lime juice, salt, and pepper, bringing to a gentle boil.
  4. Add seasoned shrimp to the skillet. Cook for 2-3 minutes on each side until pink and cooked through.
  5. Remove from heat and stir in cilantro. Serve hot, garnished with extra lime wedges.

Notes

  • This dish pairs beautifully with steamed jasmine rice or crusty bread.
  • Adjust spices to personal preference for more or less heat.
