Spinach Pesto Butter Bean

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can butter beans, drained and rinsed
  • 5 ounces fresh spinach
  • 1/4 cup pesto
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in the butter beans and spinach. Cook until the spinach wilts, about 3-5 minutes.
  5. Stir in the pesto and season with salt and pepper.
  6. Serve hot.

Notes

  • You can add a squeeze of lemon juice before serving for extra brightness.
  • For a heartier meal, serve over pasta or rice.
