Sweet Potato and Ground Turkey Skillet

A simple and healthy one-pan meal featuring ground turkey and sweet potatoes.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large sweet potato, peeled and diced
  • 1 cup chicken broth
  • 1/2 cup frozen corn
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add onion and cook until softened, about 5 minutes.
  4. Stir in garlic, chili powder, cumin, salt, and pepper. Cook for 1 minute more until fragrant.
  5. Add diced sweet potato and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until sweet potatoes are tender.
  6. Stir in frozen corn and cook for 5 minutes more, or until heated through.
  7. Garnish with cilantro, if desired.

Notes

  • For a spicier dish, add a pinch of cayenne pepper.
  • You can substitute other vegetables like bell peppers or zucchini.
