Ingredients

  • 1 large sweet potato, cubed
  • 1 cup quinoa, cooked
  • 1 cup chickpeas, rinsed and drained
  • 1 cup broccoli florets
  • 1/2 cup chopped red onion
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Toss sweet potato cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender.
  3. While the sweet potatoes roast, steam the broccoli florets until tender-crisp.
  4. In a small bowl, whisk together tahini, lemon juice, and a tablespoon of water until smooth.
  5. Assemble the bowls by dividing the cooked quinoa, roasted sweet potatoes, steamed broccoli, chickpeas, and red onion among them.
  6. Drizzle with the tahini dressing.
