4 salmon fillets
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 cloves garlic, minced
1 teaspoon grated ginger
2 cups cooked rice (white or brown)
1 cup broccoli florets
1 red bell pepper, sliced
1 cup snap peas
Sesame seeds for garnish
Sliced green onions for garnish
Instructions
In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and grated ginger. Add salmon fillets and let them marinate for at least 15 minutes.
Heat a non-stick skillet over medium heat. Remove salmon from marinade (reserve the marinade) and place in the skillet. Cook for 4-5 minutes on each side until it flakes easily with a fork.
In the same skillet, add the reserved marinade and bring it to a simmer. Add broccoli, bell pepper, and snap peas. Sautรฉ for about 5 minutes or until vegetables are tender yet crisp.
In serving bowls, place a scoop of rice, top it with the sautรฉed vegetables, and lay a salmon fillet on top. Drizzle with any remaining teriyaki sauce.
Sprinkle sesame seeds and sliced green onions over each bowl before serving.
Notes
For extra flavor, you can add a splash of lime juice before serving.
Incorporate other vegetables such as carrots or bok choy based on your preference.
