Ingredients

Scale
  • 1 pound Boneless, skinless chicken breasts or thighs
  • 1 tablespoon Olive oil
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Chicken broth
  • 0.5 teaspoon Lemon juice
  • 1 tablespoon Fresh parsley

Instructions

  1. Pat the chicken dry and season with garlic powder, onion powder, paprika, salt, and black pepper.
  2. Heat olive oil and butter in a large cast iron skillet over medium-high heat until butter melts and sizzles.
  3. Sear the chicken for 5-6 minutes on each side until golden brown and cooked through (internal temperature reaches 165ยฐF).
  4. Remove chicken from skillet. Reduce heat to medium-low.
  5. Add remaining butter to the skillet. Pour in chicken broth to deglaze the pan, scraping up any browned bits.
  6. Simmer the sauce for 2-3 minutes until it thickens slightly. Stir in lemon juice if using.
  7. Return the chicken to the skillet. Spoon the sauce over the chicken and warm together for 2 minutes.
  8. Garnish with fresh parsley and serve hot.

Notes

  • Chicken thighs provide more juiciness and tenderness than breasts.
  • Using grass-fed organic butter can enhance the flavor.
