Texas Roadhouse Style Butter Chicken Skillet

A simple recipe for a creamy, spiced chicken skillet inspired by Texas Roadhouse flavors.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  4. Add onion to the skillet and cook until softened, about 4 minutes.
  5. Add garlic and ginger; cook for 1 minute until fragrant.
  6. Stir in cumin, coriander, turmeric, and cayenne pepper. Cook for 30 seconds.
  7. Add diced tomatoes, chicken broth, and tomato paste. Bring mixture to a simmer.
  8. Return the cooked chicken to the skillet. Reduce heat to low, cover, and simmer for 10 minutes, or until chicken is cooked through.
  9. Stir in heavy cream and sugar. Heat through gently, do not boil.
  10. Taste and adjust salt and pepper as needed.
  11. Garnish with fresh cilantro before serving.

Notes

  • Serve this skillet over rice or with warm naan bread.
  • For a richer flavor, use butter instead of vegetable oil for sautรฉing.
