1 cup quinoa, rinsed
2 cups water
1 red bell pepper, chopped
1 cucumber, chopped
1 carrot, shredded
1/2 cup chopped cilantro
1/4 cup chopped peanuts
For the dressing:
1/4 cup peanut butter
2 tablespoons soy sauce
1 tablespoon lime juice
1 tablespoon honey
1 clove garlic, minced
1/4 cup water
Instructions
Cook quinoa: Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed. Let stand for 5 minutes, then fluff with a fork.
Prepare vegetables: While quinoa cooks, chop the red bell pepper, cucumber, and shred the carrot. Chop the cilantro and peanuts.
Make the dressing: In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, garlic, and water until smooth.
Assemble the salad: In a large bowl, combine the cooked quinoa, bell pepper, cucumber, carrot, cilantro, and peanuts.
Dress the salad: Pour the peanut dressing over the salad and toss to combine.
Notes
For extra spice, add a pinch of red pepper flakes to the dressing.
You can add other vegetables like edamame or snap peas.
