  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 red bell pepper, chopped
  • 1 cucumber, chopped
  • 1 carrot, shredded
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • For the dressing:
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 cup water

Instructions

  1. Cook quinoa: Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed. Let stand for 5 minutes, then fluff with a fork.
  2. Prepare vegetables: While quinoa cooks, chop the red bell pepper, cucumber, and shred the carrot. Chop the cilantro and peanuts.
  3. Make the dressing: In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, garlic, and water until smooth.
  4. Assemble the salad: In a large bowl, combine the cooked quinoa, bell pepper, cucumber, carrot, cilantro, and peanuts.
  5. Dress the salad: Pour the peanut dressing over the salad and toss to combine.

Notes

  • For extra spice, add a pinch of red pepper flakes to the dressing.
  • You can add other vegetables like edamame or snap peas.
