1 lb Lean Ground Turkey
1 tbsp Sesame Oil
1 cup Water Chestnuts, chopped
3 cloves Garlic, minced
1 tbsp Fresh Ginger, grated
3 Green Onions, sliced
1/3 cup Soy Sauce (or Coconut Aminos)
1/4 cup Honey or Maple Syrup
1 tbsp Rice Vinegar
1 tbsp Sriracha (Optional)
1 tsp Cornstarch
1 tbsp Water
1 head Butter Lettuce
Instructions
In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and Sriracha. In a separate bowl, mix cornstarch and water until smooth. Set aside.
Heat a large skillet over medium-high heat. Add ground turkey and cook, breaking it into crumbles, until browned (5-7 minutes). Drain excess liquid, leaving about a teaspoon.
Push turkey to the sides of the pan. Add green onion whites, garlic, and ginger to the center. Sautรฉ until fragrant (30-60 seconds). Mix with turkey.
Stir in water chestnuts. Pour soy sauce mixture over turkey and stir to coat.
Pour in cornstarch slurry. Stir continuously for 1-2 minutes until sauce thickens and becomes glossy. Remove from heat.
Wash and dry lettuce leaves. Spoon turkey mixture into lettuce leaves. Garnish with green onion tops, sesame seeds, or spicy mayo if desired.
Notes
For a gluten-free/Paleo option, use Coconut Aminos or Tamari.
For strict Keto, use a brown sugar alternative like Swerve or Lakanto Monkfruit.
Romaine hearts can be used as an alternative to butter lettuce, but are harder to fold.
