Turkey Meatballs with Zucchini Noodles

Ingredients

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 clove garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 2 medium zucchini, spiralized
  • 1 tablespoon olive oil
  • 1/4 cup marinara sauce

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well.
  3. Form the mixture into small meatballs, about 1-inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes, or until cooked through and browned.
  6. While the meatballs are baking, heat olive oil in a large skillet over medium heat.
  7. Add the spiralized zucchini noodles to the skillet and cook for 2-3 minutes, until slightly tender.
  8. Stir in the marinara sauce and heat through.
  9. Serve the turkey meatballs over the zucchini noodles.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the meatball mixture.
  • Ensure your zucchini noodles are not overcooked, or they will become mushy.
