Turkey Taco Meat with Bold Seasoning

- 1 lb Ground Turkey
- 1 cup Chunky Tomato Salsa
- 1 cup Long-Grain White Rice
- 1 cup Corn Kernels
- 2 cups Chicken Broth
- 1 cup Mexican Cheese
- 1 tsp Salt
- 2 tbsp Taco Spices
- Rinse rice under cold water for 2 minutes. Drain and set aside.
- Heat oil in a large skillet over medium heat. Add ground turkey and cook until browned, about 5-7 minutes.
- Stir in salsa, salt, and taco spices. Cook for 2-3 minutes.
- Add drained rice, corn, and chicken broth. Stir and bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally.
- Remove from heat, sprinkle cheese over the top, cover, and let sit for 5 minutes.
- Adjust seasoning if needed. Serve topped with cilantro or avocado if desired.
Notes
- Ground chicken or beef can be substituted for ground turkey.
- Fresh diced tomatoes or homemade salsa can be used instead of chunky tomato salsa.
- Brown rice may require additional cooking time.
- Frozen or canned corn is acceptable.
- Vegetable broth can be used for a vegetarian option.
- Cheddar or Monterey Jack cheese can be used instead of Mexican cheese.
