Ingredients

Scale
  • 1 lb Ground Turkey
  • 1 cup Chunky Tomato Salsa
  • 1 cup Long-Grain White Rice
  • 1 cup Corn Kernels
  • 2 cups Chicken Broth
  • 1 cup Mexican Cheese
  • 1 tsp Salt
  • 2 tbsp Taco Spices

  2. Heat oil in a large skillet over medium heat. Add ground turkey and cook until browned, about 5-7 minutes.
  3. Stir in salsa, salt, and taco spices. Cook for 2-3 minutes.
  4. Add drained rice, corn, and chicken broth. Stir and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally.
  6. Remove from heat, sprinkle cheese over the top, cover, and let sit for 5 minutes.
  7. Adjust seasoning if needed. Serve topped with cilantro or avocado if desired.

Notes

  • Ground chicken or beef can be substituted for ground turkey.

  • Brown rice may require additional cooking time.
  • Frozen or canned corn is acceptable.
  • Vegetable broth can be used for a vegetarian option.
  • Cheddar or Monterey Jack cheese can be used instead of Mexican cheese.
