Turkey and Veggie Skillet for Weeknights

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup spinach (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat for 1 minute.
  2. Add diced onion and sautรฉ for 3-4 minutes until translucent.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add ground turkey, breaking it apart, and cook until browned, about 6-8 minutes.
  5. Stir in diced red bell pepper, zucchini, and mushrooms. Cook for 5-7 minutes until tender.
  6. Add halved cherry tomatoes, oregano, paprika, salt, pepper, and red pepper flakes (if using). Simmer for 3-5 minutes.
  7. If using spinach, stir it in and cook until wilted, about 2 minutes.
  8. Remove from heat and sprinkle with fresh parsley.
  9. Serve warm.

Notes

  • Customize with your favorite vegetables.
  • Substitute chicken or beef for turkey if desired.
  • Store leftovers in an airtight container for up to 4 days.
  • Add grated cheese before serving for extra flavor.
