2 cups all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup milk
1 large egg
1 teaspoon vanilla extract
Vegetable oil for frying
Powdered sugar for dusting
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
In a separate bowl, whisk together the milk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 350ยฐF (175ยฐC).
Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot.
Fry for 2-3 minutes per side, until golden brown and puffed.
Remove the beignets with a slotted spoon and drain on paper towels.
Dust generously with powdered sugar before serving.
Notes
For best results, ensure your oil is at the correct temperature. Too cool and the beignets will be greasy; too hot and they will burn before cooking through.
You can adjust the amount of vanilla extract to your preference.
