Vegetable Curry Bowl

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper (optional)
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (13.5 oz) can coconut milk
  • 1 cup mixed vegetables (e.g., broccoli florets, chopped carrots, peas)
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  5. Pour in diced tomatoes and coconut milk. Bring to a simmer.
  6. Add mixed vegetables. Cover and cook for 10-15 minutes, or until vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot over cooked rice.

Notes

  • You can use any combination of your favorite vegetables.
  • Adjust the cayenne pepper for your desired level of spice.
