Simple White Bean Soup

A hearty and easy white bean soup recipe.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups vegetable broth
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: crusty bread for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and add cannellini beans, rosemary, and thyme.
  5. Bring to a boil, then reduce heat and simmer for at least 20 minutes, or until vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, with crusty bread if desired.

Notes

  • For a creamier soup, you can blend a portion of the soup before serving.
  • Add a bay leaf during simmering for extra flavor.
  • You can add other vegetables like spinach or kale in the last 5 minutes of cooking.
