  • 1 cup packed brown sugar
  • 4 large eggs

  • 1/2 cup milk
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 very ripe bananas, mashed

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and flour two 9×5 inch loaf pans.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. In another bowl, mix the sour cream, milk, and mashed bananas.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Divide the batter evenly between the prepared loaf pans.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the loaves cool in the pans for 10 minutes before turning them out onto a wire rack to cool completely.

Notes

  • Use very ripe, spotty bananas for the best flavor and moisture.
  • Do not overmix the batter after adding the flour.
