  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 8 oz pasta, cooked according to package directions
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until browned. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute more until fragrant.
  5. Stir in diced tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.
  6. Return chicken to the skillet. Reduce heat and simmer for 10 minutes, or until chicken is cooked through and sauce has thickened.
  7. Serve sauce over cooked pasta. Sprinkle with Parmesan cheese.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the oregano and basil.
  • You can add other vegetables like bell peppers or zucchini to the sauce.
