Winter Vegetable Soup - Tasty

A warming and nourishing soup packed with seasonal vegetables, perfect for a cold day.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 cup diced potatoes
  • 1 cup chopped kale
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and add diced potatoes and thyme.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  6. Stir in chopped kale and cook for 5 minutes until wilted.
  7. Season with salt and pepper to taste.

Notes

  • For a richer flavor, you can add a bay leaf while simmering.
  • Serve with crusty bread for a complete meal.
