Zucchini Cheddar Bread

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 cup shredded zucchini, squeezed dry
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup chopped fresh chives (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, black pepper, and garlic powder.
  3. Stir in the shredded zucchini and cheddar cheese.
  4. In a separate bowl, whisk together the vegetable oil, eggs, and milk until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. If using, fold in the chopped chives.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Ensure you squeeze as much moisture as possible from the shredded zucchini for a better texture.
  • For a spicier kick, you can add a pinch of cayenne pepper to the dry ingredients.
