A quick and healthy stir fry using zucchini noodles.

Ingredients

  • 2 medium zucchinis, spiralized
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 cup mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Optional: cooked protein (chicken, tofu, shrimp)

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and stir fry for 30 seconds until fragrant.
  3. Add mixed vegetables and stir fry for 3-5 minutes until tender-crisp.
  4. Add spiralized zucchini noodles and cooked protein (if using).
  5. Pour in soy sauce and sesame oil.
  6. Toss everything together and cook for 2-3 minutes, until zucchini noodles are tender but not mushy.
  7. Serve immediately.

Notes

  • For best results, spiralize zucchini just before cooking.
  • Adjust soy sauce to your taste.
  • Add a pinch of red pepper flakes for a spicy kick.
