Baked Cod in Coconut Lemon

A simple and flavorful baked cod recipe with coconut milk and lemon.

  • 1 lb cod fillets
  • 1/2 cup coconut milk
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tbsp chopped fresh parsley

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Place the cod fillets in a baking dish.
  3. In a small bowl, whisk together the coconut milk, lemon juice, minced garlic, salt, and pepper.
  4. Pour the coconut milk mixture over the cod fillets.
  5. Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork.
  6. Garnish with fresh parsley before serving.

Notes

  • You can add other vegetables like asparagus or cherry tomatoes to the baking dish.
  • Adjust lemon juice to your preference.
