A simple and refreshing salad with avocado, corn, and a light lime dressing.

Ingredients

  • 2 cups corn kernels (fresh or frozen, thawed)
  • 1 ripe avocado, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a medium bowl, combine the corn kernels, diced avocado, chopped red onion, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice and olive oil.
  3. Pour the dressing over the salad ingredients.
  4. Gently toss to combine.
  5. Season with salt and black pepper to taste.
  6. Serve immediately or chill for later.

Notes

  • For extra flavor, add a pinch of chili powder or cumin to the dressing.
  • If using frozen corn, ensure it is fully thawed before adding to the salad.
