Homemade Baileys Fudge Brownies

Rich, chocolatey brownies infused with the flavor of Baileys Irish Cream, topped with a layer of creamy Baileys fudge.

Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup Baileys Irish Cream
  • 1 cup semi-sweet chocolate chips
  • For the Fudge Topping:
  • 1 (12 ounce) package semi-sweet chocolate chips
  • 1 (14 ounce) can sweetened condensed milk
  • 1/4 cup Baileys Irish Cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the melted butter and granulated sugar.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the 1/2 cup of Baileys Irish Cream and the 1 cup of semi-sweet chocolate chips.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  9. While the brownies are baking, prepare the fudge topping. In a medium saucepan over low heat, combine the 12 ounce package of semi-sweet chocolate chips, sweetened condensed milk, and 1/4 cup of Baileys Irish Cream. Stir constantly until the chocolate chips are melted and the mixture is smooth. Remove from heat and stir in 1 teaspoon of vanilla extract.
  10. Once the brownies are out of the oven, immediately spread the fudge topping evenly over the warm brownies.
  11. Let the brownies cool completely in the pan before cutting into squares.

Notes

  • For an extra Baileys kick, you can add a tablespoon of Baileys to the brownie batter.
  • Ensure your Baileys Irish Cream is at room temperature for easier incorporation.
  • Store cooled brownies in an airtight container at room temperature for up to 3 days.
