Meal Prep Breakfast Burritos

Make-ahead breakfast burritos perfect for busy mornings.

Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 pound breakfast sausage, casings removed
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 1 cup shredded cheddar cheese
  • 12 large flour tortillas
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (4 ounce) can diced green chilies

Instructions

  1. In a large bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Pour egg mixture over the sausage, onion, and pepper. Cook, stirring occasionally, until eggs are set. Stir in cheese, black beans, and green chilies.
  5. Warm tortillas according to package directions.
  6. Spoon the egg mixture evenly into the center of each tortilla.
  7. Fold in the sides of each tortilla, then roll up from the bottom to create a burrito.
  8. Wrap each burrito tightly in plastic wrap or foil.
  9. Store burritos in the refrigerator for up to 4 days or freeze for up to 2 months.

Notes

  • To reheat, remove from wrapping and microwave on high for 1-2 minutes, or until heated through.
  • For a spicier burrito, add a pinch of cayenne pepper to the egg mixture.
  • You can substitute turkey sausage for pork sausage.
