No-Bake Lemon Cheesecake

A simple no-bake cheesecake with a bright lemon flavor.

Ingredients

  • 1 cup graham cracker crumbs
  • 3 tablespoons butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped

Instructions

  1. Combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch pie plate.
  2. In a large bowl, beat cream cheese and sugar until smooth.
  3. Stir in lemon juice, lemon zest, and vanilla extract.
  4. Fold in whipped cream until just combined.
  5. Pour filling into the prepared crust.
  6. Chill for at least 4 hours, or until firm.

Notes

  • For a firmer crust, bake the graham cracker mixture for 8-10 minutes at 350ยฐF (175ยฐC) before chilling.
  • Garnish with fresh berries or a dollop of whipped cream before serving.
