Stuffed Chicken Breasts with Spinach and Cheese

  • 4 boneless, skinless chicken breasts
  • Toothpicks or kitchen twine
  • 2 cups fresh or frozen spinach
  • 2 cloves garlic, minced
  • 8 oz cream cheese
  • 1 cup shredded mozzarella or parmesan cheese
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • Paprika to taste
  • Italian seasoning to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sautรฉ garlic until fragrant, then add spinach and cook until wilted. Let cool.
  2. Combine spinach mixture with cream cheese and shredded cheese.
  3. Butterfly chicken breasts to create pockets.
  4. Fill chicken pockets with the spinach-cheese mixture. Secure openings with toothpicks or twine.
  5. Rub chicken with olive oil and season with salt, pepper, paprika, and Italian seasoning.
  6. Sear chicken in an oven-safe skillet over medium heat for 2-3 minutes per side until golden brown.
  7. Transfer skillet to a preheated oven at 375ยฐF (190ยฐC). Bake for 15-20 minutes, or until internal temperature reaches 165ยฐF (74ยฐC).
  8. Let chicken rest for 5 minutes. Remove toothpicks or twine. Slice and serve.

Notes

  • You can substitute goat cheese or feta for mozzarella or parmesan.
  • Avocado oil can be used instead of olive oil.
  • Ensure the internal temperature of the chicken reaches 165ยฐF (74ยฐC) for safe consumption.
